The Toasted Ice Cream Affogato

The first dessert I tried after learning you can toast ice cream.

What you need

  • A double shot of espresso (2 oz)or 1 tsp (4 g) FLUR Instant in 1/4 cup (60 ml) hot water
  • 2 scoops old fashioned vanilla ice cream (any vanilla is fine, gelato is traditional)

How to make it

  1. Add two scoops of vanilla ice cream to a latte glass.
  2. Use a kitchen torch to toast the top of the ice cream. Keep the flame moving so you get an even golden brown color, just like you're brûléeing the top of a crème brûlée.
  3. Pour the espresso directly over the toasted top.
  4. Eat it right away with a spoon. The bitterness from the espresso, the sweetness from the ice cream, and that caramelized flavor on top is what makes it taste like a crème brûlée.

Pro tip

Get your espresso ready first, then torch the ice cream right before you pour. The ice cream starts melting the second the flame hits it, so you want the shot ready to go the moment the top is caramelized.
