What you need
- 2 cups turbinado sugar
- 1 cup water
- 1 tbsp vanilla bean paste
- A pinch of salt
How to make it
- Add the sugar and water to a saucepan over medium heat. Stir until the sugar dissolves, then bring to a boil.
- Take the pot off the heat. Add the vanilla bean paste and the pinch of salt. The salt sounds weird but it rounds everything out and makes the vanilla taste even more like vanilla.
- Give it a good stir and let it cool before transferring to a bottle or jar.
- Pour a splash into your iced latte, cold brew, shaken espresso, or matcha. Also great drizzled over vanilla ice cream. Keeps in the fridge for about a month.
Pro tip
Always add the vanilla bean paste after the syrup comes off the heat. If you stir it in while the pan is still hot, the heat can cook off the flavor.
